carrot cake


At one of my wedding showers my Aunt Sue gave me this lovely cake stand and several of her favorite cake recipes to go along with it!  In honor of Easter this weekend I decided to make the carrot cake.  This is a delicious recipe...thank you Aunt Sue!


One Bowl Carrot Cake
Mix the following by hand until well blended:
2 tsp. baking soda
1 tsp. salt
3 eggs beaten
1 cup nuts
2 cups sugar
2 cups flour
1 tsp. vanilla
1 1/4 cup oil
1 1/2 cup shredded coconut
2 cups shredded carrots
1 8 oz. can crushed pineapple with juice

Bake in well greased and floured pans at 350° for about 40 minutes (keep an eye on this-different ovens vary).  Until reasonable firm (toothpick test).  Let cool before frosting with cream cheese frosting (below).


Cream Cheese Frosting
cream together:
1 8 oz. package cream cheese
1/2 cup butter softened
add in:
1 tsp. vanilla
1 box sifted powdered sugar
Add milk a teaspoon at a time to thin if necessary


I added some crushed walnuts around the edges of the cake and sprinkled the leftover coconut on top!

This cake is delicious! I made it for a family dinner and everyone loved it. There was nothing left.
