heirloom tomato bruschetta

Every time I watch the movie Julie and Julia my mouth waters.  This is especially true during the scene where Julie makes bruschetta!  It always looks so juicy and delicious.  I finally decided to give way to the craving and make my own bruschetta!  I could eat this dish everyday...

4 heirloom tomatoes
1/2 cup fresh basil
1 red pepper
1/2 red onion
4 cloves garlic
3 tbs. olive oil
2 tbs. balsamic vinegar
goat cheese
salt and pepper
french baguette

roast red pepper
chop tomatoes (remove seeds), onion, garlic, basil and pepper
toss all ingredients in a bowl and add olive oil and balsamic vinegar
add salt and pepper to taste
cover and let sit at room temperature
slice baguette in 1 inch thick slices
heat olive oil in skillet and add baguette slices
  cook until browned on each side
spread goat cheese on toasted slices
spoon tomato mixture on bread slices
sprinkle with salt and serve

Tastes as juicy and delicious as it looks in the movie! :)
