thai peanut turkey burgers


After several busy weeks and lots of travel I am trying to get back on track with cooking healthy meals at home.  Last night we made thai peanut turkey burgers and baked sweet potato fries.  A friend from work introduced me to the burger recipe (doubled recipe found here) and I had to share because they are beyond delicious.  This meal will definitely become a regular on the menu at our house.  Yum!

thai peanut turkey burgers:
16oz ground turkey
2 medium carrot, shredded
2 large scallion, minced
1/2 tsp sesame oil
2 tsp chili garlic sauce (Sriracha)
4 tbsp creamy peanut butter
freshly ground salt & pepper
1 tsp ground ginger

cilantro-chili mayo:
4 tbsp light mayonnaise
handful of cilantro, finely minced
3 tsp chili garlic sauce (Sriracha)

hamburger buns of your choice
mixed greens

Combine burger ingredients a mixing bowl and combine thoroughly.  Heat a skillet over medium-high heat. Form the turkey mixture into four patties.  Cook for about 7-10 minutes per side, until cooked through.  Serve on buns with cilantro-chili mayo and greens.









baked sweet potato fries:
sweet potato
olive oil
seasoning (salt, pepper, garlic salt)

Pre-heat oven to 450°.  Wash and slice the potato into desired french fry size.  Coat the fries in olive oil and season with salt, pepper and garlic salt.  Put on pan and bake for 20 minutes or until browned.  The fries are extra tasty when served with the cilantro-chili sauce for dipping.
