peppermint bark

One of my very favorite holiday treats is peppermint bark!  I usually purchase this yummy candy, but this year I decided to make it myself.  I mean, how hard could it be?  The answer - pretty darn easy!  The best news, it tastes just as good as the store bought stuff!  Delish! 

1 - 12 oz bag chocolate chips (milk or dark)
1 - 12 oz bag white chocolate chips
2 tspn. peppermint extract
8 candy canes

Line a baking sheet with waxed paper.  Unwrap your candy canes and place in a large ziplock bag.  Seal the bag and crush the candy with a hammer.  Set aside.  In a double boiler melt chocolate chips.  Once melted stir in peppermint extract.  Pour the chocolate over waxed paper and spread evenly.  Put the pan in the refrigerator to set for 15-30 minutes.  Once cool and set, melt the white chocolate in the double boiler.  Once melted pour over the chocolate and spread evenly.  Sprinkle your candy cane pieces over the top of the white chocolate and press into the candy.  Return the pan to the refrigerator for 30 minutes or until the candy is set.  Break into pieces or score and break.
